Healthy Cookies
Sure … “healthy”! Except I forgot, halfway through the preparation, that I was preparing half the dose and put twice the quantity of oil and baking powder, so I had to remedy by adding 20 gr of oat flakes :-(… it’s true that cooking makes you think about nothing, just clears your mind!: lol: The recipe comes from the blog Fior di Frolla, who found it in 101 Cookbooks. After a thousand conversions from the Anglo-Saxon units of measurement, I tried to obtain doses in grams. Of course… I finally publish the correct ones. Keep in mind that from my mistakes I got 30 pellets.
Ingredients:
150 gr of oat flakes (I had the “big” ones)
25 gr of coconut flour
40 gr of almond flour
1/2 tbsp of cinnamon
1 pinch salt
1/2 tbsp of baking powder
100 gr of chocolate chips
1+½ ripe bananas
30 ml of sunflower oil
½ vanilla pod (I didnt’ have it)
Method:
In a bowl, mash the bananas with oil and vanilla seeds. In a bigger bowl mix the dry ingredients, except for the chocolate. Add the liquid ingredients to the dry and mix. Finally, add the chocolate chips and mix again. Get your hands “dirty” and form some pellets, the size of a walnut, then compress them in the palm of your hand. Once you have finished up all the dough… lick your fingers 😉 bake at 180°C for 15 minutes. Let the cookies cool and then enjoy them. I put some of them in the fridge, because of the chocolate, and I must say that, in this heat, eating them cool is even more pleasant! Crispy outside and soft inside. Unfortunately, the almonds aren’t perceived. Be careful! One leads to another 😉 … with the excuse that they are light!

they look so yummy! I think the idea of using bananas is great, just wonder whether you can feel its taste though
