Yellow Plums Tart
This is the classic successful experiment, a truly delicious taste, also thanks to small plums that a friend of mine gave me yesterday, just picked from the tree. The cake is very simple, light, sweet and “moist”, because of the fruit, ideal for a Sunday afternoon, relaxing on the couch!
Ingredients:
200 gr of flour
150 gr of cane sugar
60 gr of vegetable oil
baking powder (check the instructions on the package for quantity)
1 tablespoon of apple cider vinegar
juice of 1 / 2 lemon
approx 200 ml of soy milk
vanilla flavour
1 pinch of salt
6 ripe yellow plums (any fruit will do anyway!)
Method:
In a bowl, mix all ingredients together, adding soy milk a little at a time, until you get the right consistency of a cake dough. Cut the plums into chunks and add them to the mixture. Pour it in a cake tin and bake in a preheated oven at 180°C for 35-40 minutes. Let it cool completely before serving.
