Fragrant Patties
…with a stringy heart.
I take this opportunity to greet the new VeganChefs and send a hug to all of you; even if I don’t post that much, I have a peep at the blog every day. The other day I found the rice mozzarella cheese, and after using it for other dishes (which I’ll post as soon as I can) I got a bit of it leftover, and while I was preparing some patties, I’ve got this idea…
Ingredients:
250 gr of cooked lentils
150 gr of sweet corn
green olives
1 onion
bread crumbs
sage
thyme
chives
rosemary
wild fennel
rice mozzarella
salt
oil
Method:
Drain lentils (I used the canned ones) and corn, combine them with the chopped fresh herbs, along with the onion, peeled, and the pitted olives. Mix and blend all of the ingredients until the mixture is homogeneous. Use the breadcrumbs to make it more compact. Wet your hands and take a spoonful of the mixture: place a piece of mozzarella inside and give it the shape of a patty. Bake at 175°C for 30 minutes, turning halfway through cooking.
