Summer Soy Chunks

Colourful and fragrant, perfect for summer!

Ingredients:
50 gr of soy chunks
1 white onion
70 gr of thinly sliced carrots
1 tablespoon of olive oil
saffron
salt
paprika

Method:
Cook soy chunks for 15 minutes in salted water. Drain and squeeze them well. In a pan, fry onion in a bit of oil; add chunks and carrots; season with salt and sprinkle with paprika. In a coffee cup, dissolve the saffron in warm water, stir and pour it into the pan, letting it evaporate, covered with a lid, for 10 minutes, then serve.
