Basmati Rice with Mint and Peppers

The day looks promising, at least from the meteorological point of view! I propose this recipe, nice and tasty :-). For those of you who love rice, this is definitely very tasty and fresh … let’s start turning the hobs on!

Ingredients:
(serves 2)
1 heaped cup of basmati rice
1 nice red pepper
1 jar of white soy yogurt
fresh mint
extra virgin olive oil as needed
1 tablespoon of cider vinegar
salt as needed
pepper to taste

Method:
Prepare a pilaf rice, with a glass of rice and two of water, add salt. Boil until it has absorbed all the water, covered, and set aside. Cut the pepper into strips, remove the seeds and the white skins. Plunge it into water, acidulated with vinegar, and  cook it. Drain it well and let it cool. As soon as it will be warm, puree with a mixeer, add a little salt and e.v.o. oil.
Season the rice with yogurt and finely chopped fresh mint, and pepper if you like. Prepare single portions. But first spread well the plate with the pepper cream. If you wish, you can decorate with an olive, or with what you like best. I assure you that the preparation, in its simplicity, is effective and is very tasty 🙂

    Never tried mint with peppers… I should give it a try!
