Banana and Coconut Cake


I have been wanting to make a cake with bananas and coconut for a while. I searched a bit online and I found many of them. Eventually I took as an inspiration a recipe from Joy de  baker, but I changed it a little. It came out very spongy and fragrant.


2 very ripe bananas
110 gr of granulated sugar (+ 1 tablespoon)
4 tablespoons of olive oil
125 gr of flour
1 teaspoon of baking soda
1 / 2 teaspoon of salt
40 gr of grated coconut
1 teaspoon of ground cinnamon
1 pinch of ground ginger
1 pinch of clove powder
1 pinch of nutmeg powder

Preheat oven to 180 degrees. Line a plum cake mold with baking paper. Mash the bananas with a fork and mix them with sugar. Add oil and flour, mixed together with baking soda and salt. Add all the spices and eventually the grated coconut. Pour the mixture into the mold and sprinkle it with the remaining tablespoon of sugar. Bake for about 40-45 minutes (make the toothpick test to be sure):-)
