Double Chocolate Muffins
Here I am with my first recipe. I decided to propose you some muffins, not exactly summery, maybe a little high-calory, but definitely mouth-watering and with reduced sugar.
Ingredients:
(makes about 6 / 7 muffins):
100 gr of semi wholegrain flour
20 gr of fair trade cocoa
2 tablespoons of corn malt
1 teaspoon of cream of tartar
1 / 2 teaspoon of baking soda
1 / 2 teaspoon of vanilla powder
1 tablespoon of raw brown sugar
130 ml of soy milk
1 tablespoon of extra virgin olive oil
about 3 / 4 haed tablespoons of chocolate chips
1 pinch of salt
Method:
Mix the dry ingredients in a bowl, make some room in the middle and pour oil and malt in. Add very slowly the soy milk, stirring well with a whisk. Finally, add the chocolate chips. Pour the mixture into cups, sprinkle the surface with a bit more chocolate chips, and bake at 175 Celsius degrees for about 20 minutes. If your oven is as powerful as mine, consider a couple of minutes less. Let them cool on a wire rack and serve, maybe accompanied by a vanilla sauce and a good black tea.
