Victoria Sandwich

Finally I’m back here with a working pc and a sweet form the not-so-far England. Victoria sandwich, a name borrowed from the famous Queen, who, apparently was a glutton for it. The preparation is easy, and since my boyfriend’s Danish grandma is nuts about sweets, and we both missed her birthday, we thought it was a simple and effective way to celebrate it again together.

for the dough
200 gr of margarine
200 gr of sugar
200 gr of flour
50 ml of milk
8 gr of baking powder
4 teaspoons of Orgran or potato starch
0.5 gr of vanillin
1 pinch of salt
for the filling
strawberry jam
soya cream

For the dough
In a bowl, put sugar and margarine and whip them with an electric whisk, trying to amalgamte the two components as much as possible. Add the orgran, the egg replacer; or replace it with 4 tablespoons of potato starch, mixed with 8 tablespoons of water to dissolve any lumps, and add it to the mixture to replace eggs. Once you’ve got a smooth mixture, add baking powder, flour and vanillin with 50 ml of milk, remembering that salt helps the chemical process of rising. Then, divide the mixture into two cake tins, that will be baked at 180┬░C for 20 minutes.
For the filling
I used homemaed strawberry jam and soy cream, plus strawberries cut into chunks .

    I was just looking for somewthing yummy to prepare for my dad’s birthday this sounds really good! and can be “personalized”.
