Summery Creamy Soup

50 gr of dried peas
60 gr of fresh baby spinach
6 fresh mint leaves
2 tablespoons of extra virgin olive oil
soya cream
diced tomatoes

Soak the peas for about a couple of hours, then cook them in 300 ml of lightly salted water. Let them absorb all the liquid and set aside to cool. Once cool, put in the jug of the blender along with spinach, mint and olive oil, process well until it becomes all nice and smooth, then pour it into a bowl. Garnish with soya cream and some chopped tomatoes.
