Country No-Meat Loaf
An exceptional flavour! A mix of flavors, all to be discovered!
Tuesday morning I went to the market promoted by Campagna Amica (whose purpose is to protect farmers in the area) and between the stalls I found something that really intrigued me. A “bouquet for omelettes” very unusual! I couldn’t resist to such a culinary challenge could I? 😉
Ingredients:
1 potato
1 courgette
1 handful of green beans
1 abundant handful of fresh peas
2 green onions
2 zucchini flowers
wild mint
chard
Swiss chard
chive
parsley
breadcrumbs
Method:
Steam cook potato, cut into chunks, zucchini, green beans and peas in the same pot. Set aside and let them cool. Once the vegetables are warm (no matter if green beans or zucchini are too soft, the will be blended) blend them with the rest of the ingredients (which made up the bouquet), slowly incorporating the bread crumbs, until mixture is thick and dense. Oil a baking dish and sprinkle it with breadcrumbs, pour the mixture into it and sprinkle again with the breadcrumbs, to form the crust that makes it so delicious. Bake at 200°C for about 20 minutes.
Comment:
I chose not to add salt to not affect the taste of the final preparation, which is not affected in any way and is pleasantly spicy. Warm is good, but at room temperature is extraordinary! The different flavors stand out and blend together in a unique way!

OK. I’m going to compose my personal bouquet with the same ingredients… and I’ll proceed! maybe adding some tofu as well or maybe tempeh. No, maybe tofu, I don’t want to cover the flavours with tempeh
