Bon Bon Double
When I feel like having some sweets but I’m dieting, it may seem weird, but I make these sweets: basically, I have one of them and I feel pampered and satisfied, enough not to overdo it. To mitigate the fact that I was feeling guilty, I added ground flax seeds…well, this is another way to get Omega 3, so important for your health. They are very easy to do, even a kid could make them!
Ingredients:
70 gr of dry vegan biscuits
30 gr of coconut flour
280 gr of roasted hazelnuts
50 gr of soaked raisins (optional)
2 tablespoons of instant barley coffee
100 ml of rice milk
5 tablespoons of agave syrup
60 ml of sunflower oil
30 gr of ground flaxseed
Method:
Finely chop the biscuits, they should become like a flour; I used the coffee grinder, but you can put them in a plastic bag and beat them on the table. Set aside 20/25 hazelnuts,which we’ll put into the sweets; coarsely grind about 250 gr of hazelnuts. I finely chopped the coconut as well,and added it to the nuts (leave 30 gr of ground hazelnuts aside).
Now, also add barley coffee, sweetener, milk, oil, flax seeds, soaked and coarsey chopped raisins and mix it all very well. The mixture will be fairly firm.
Shape some pellets and put a hazelnut inside; then, roll them in dried coconut or in ground hazelnuts, about 30 gr, which we have put aside. They’re good also kept in the fridge and served chilled.
