Azuki with Pumpkin Cream
I propose this simple recipe, tasty and light, since not even an hour ago I pigged myself on an unsuccessful cake, but not to throw away.
Ingredients:
1 slice of pumpkin (about 200 grams)
1 potato
1 onion
60 gr of azuki beans
sea salt
cumin
Method:
Boil the azuki beans (after soaking them overnight) with half an onion and salt. Let them cook at least for an hour. Meanwhile, cut pumpkin and potatoes into thin slices, with the half onion, and place everything in the bamboo container.
Cover the pot of beans with the bamboo steamer. In just ten minutes the vegetables are ready, if you leave them more they may go pulpy. Add salt and a little cumin. I love the taste of vegetables cooked this way, and steam cooking allows not to lose almost nothing of their nutritional properties.
Blend it all adding a tablespoon of extra virgin olive oil. Drain the azuki beans, add them to the cream and voilà, a healthy dish, light and simple! Bon appetit.

I had heard that azuki beans and pumpkin go well together, I mean, it’s not the first time that I read a recipe that calls for both of them… seems so yummy! and I agree with you that steam cooking is excellent 🙂
