Craving for No-Meatballs


Tonight I had an incredible craving for no-meatballs, but – needless to say – I had run out of every possible supply of seitan. What to do, then? Recycle leftovers and use up what the pantry had to offer, klar. 😉

The result was surprising, I’ll tell you the rest in the comment.

250 grams of kidney beans (weighed after cooking)
200 grams of corona beans (ditto)
4-5 cherry tomatoes
tofu (I still had a piece of tofu with sesame seeds)
water as needed

Easy peasy! Chop all the ingredients together adding a little water, a little at a time, as the mixture is too thick and not easy to mix well, then incorporate – eventually – a little of bread crumbs, to make it less sticky. Shape the mixture into balls, roll in breadcrumbs and place them on a baking tray. Bake at 180°C for 15 minutes. Be careful: they will never get golden-brown, but will remain crunchy, therefore keep watch on the oven, always 😉

I think the strong point of this recipe is the parsley. It gives a distinctive note to a mixture which, otherwise, would be quite ordinary. And tomatoes … I even found a whole piece of tomato in one of the no-meatballs, and definitely gave me the inspiration for – who knows? – some no-meatballs with a surprise inside! 😉
