Veg Skagen Röra
Today I decided to propose you a delicious snack coming from Denmark, although, of course, veganized. The Skagen Rora, in fact, in the original recipe should be made of shrimps. The name comes from the town of Skagen, not far from Aarhus (Jutland). Depending on the places and traditions, can be eaten with a raggmunk (pancake or omelette), fried bread or inside of an avocado.
Ingredients:
1 jar of vegan sour cream
2 grated carrots
1 red onion
1 stalk of celery
1 teaspoon of sambal oelek
dill
2 teaspoons salt (optional)
1 teaspoon lemon juice (optional)
for the base (chose the one you like best):
bread
avocado
raggmunk (I’ll post the recipe soon)
Method:
Julienne carrots and finely dice red onion and celery. Prepare the dill, trying to chop it as finely as possible and mix well the ingredients. Get the sour cream and mix it separately with a teaspoon of sambal oelek (thai sauce of hot peppers) and mix all the vegetables with a couple of teaspoons of salt, to taste.
for the bread:
We used the sandwich bread, cut out the edges and toasted it with margarine in a skillet. Once golden, we cut the bread previously “fried” in yet more squares, to create the tartlets on which we then laid the mixture.

not sure i can find the that sauce, but I’m sure I can replace it with red capsicum and hot pepper, I want to try this out soon
although I couldn’t know how to pronounce it, seems so good! Not sure I find sour cream, but should be quite easy to prepare with silken tofu, I suppose
