Beans Mediterranean Salad
Couldn’t be easier, it seems ridiculous even to post it … But well, it’s the custom to show you my dinner 😀
Ingredients:
60 gr white Corona beans
1 small lettuce head
4 “Date” tomatoes
1/2 onion
1 tablespoon of black olives
1 tablespoon of pine nuts
1 teaspoon of gomasio
basil
chive
mint
extra virgin olive oil
Method:
After soaking the white beans for at least 8 hours, cook them for about an hour.
Meanwhile, slice the onion and soak it for an hour or more (if you love strong tastes, you can omit this step, it is necessary for me otherwise I cannot digest the onion at all!)
Wash the lettuce leaves and dry them well. Cut and arrange them on the bottom of a shallow dish.
Rinse the tomatoes well, cut them in quarters and keep aside.
Once beans are done, rinse them well under cold water and place them in the centre of the bed of lettuce.
Squeeze the onion well and rinse it under running water. Arrange it over the beans together with the tomatoes.
Arrange olives and pine nuts as well.
Finally, snap the herbs and season with a trickle of extra virgin olive oil and gomasio.
Let it rest half an hour before serving.
Fresh and relatively “quick” (if using canned beans, for instance).
