Fusilli with Zucchini and Crispy Chickpeas

Here’s to the holidays and the recipes you can post VeganWiz 🙂

Ingredients:
2 zucchini
150 gr of previously boiled chickpeas
3 / 4 ripe tomatoes
1 piece of red onion
a few leaves of sage
bread crumbs
extra virgin olive oil
salt

Method:
In a large saucepan or wok, cook together sliced zucchini, onion, chopped tomatoes, chick peas with sage and sprinkle with extra virgin olive oil for about twenty minutes, or according to your cooking preferences (I added a bit of water while cooking, to soften it all and cook it in a lighter way). When almost done, add salt and quite a bit of bread crumbs. Drain the pasta that you have boiled in the meantime, and stir in the sauce.
Excellent result … I also suggest a sprinkling of chopped almonds on the dish…. What a goodness 🙂
