Seitan Stew
Here it is my version of seitan stew, served with polenta! It’s a simple recipe, quick and yummy!
Ingredients:
(serves 4)
300 gr of seitan (homemade is best, but for convenience mine was already prepared)
150 gr of cherry tomatoes
10 pitted green olives
10 pitted black olives
1 handful of capers
150 gr of mushrooms
1 clove of garlic
extra virgin olive oil
salt
pepper
4 / 5 basil leaves
Method:
Fry the garlic in a pan with a dash of extra virgin olive oil. Add the mushrooms, cut into thin slices, and cook for 5 minutes. Then add seitan, chopped into cubes, the halved cherry tomatoes, olives, capers, salt and pepper to taste. Cook on high heat for about ten minutes, stirring occasionally. Once removed from the heat, add a few leaves of fresh basil and take the garlic clove out. I served the stew with polenta and it was a success!
