Seitan No-Meatballs
Happiness is … preparing seitan no-meatballs appreciated your big eater 4 yrs old daughter ;-).
The first experiment of self made seitan, started without much exultation, ended with a big win! Very proud of it! This is the seitan loaf, anemic and bland 🙁
With a portion of this seitan I made the “very good” (???) bland scallops :-D, which, personally I didn’t like … but my boyfriend did :-O. I was quite depressed I put the remaining seitan in the freezer, and after two weeks I made these magnific no-meatballs, revising my mum’s classic recipe (with less garlic …)
Ingredients:
self produced seitan
bread crumbs or grated bread
tomato paste (at will :-D)
salt
pepper
parsley
garlic
nutmeg
Method:
In a food processor, chop the seitan with all the listed ingredients, shape the mixture into balls, flatten, dip in breadcrumbs and brown them in a pan with a little olive oil … this is the fried and light version 😀 with the arrival of the cold season I’ll also experiment with no-meat balls sunken in a sea of tomato sauce ;-D. My no-meat balls came out golden outside and soft/crumbly inside; for a more compact mixture, I’d add more bread crumbs or grated bread. As a decoration, I used basil instead of fresh parsley, which I hadn’t … but it would suit best! Try them and let me know … see you for the next no- meatball (the first one of a long series @ _ @)
