Multicolour Millet Croquettes
I often prepare croquettes, no-meatballs and veggieburger. I enjoy experimenting and inventing new flavours every time, as I always say: the only limit is your imagination! This time, I have to say, “the experiment” came out really well! 🙂 I present you my multicolour millet croquettes
Ingredients:
(makes about 20)
extra virgin olive oil
1 + 1/2 cup of millet
2 carrots
1 onion
1 clove of garlic
1 large bell pepper
green olives
parsley
sea salt
breadcrumbs
Method:
I chopped onion and garlic, and fried them in a pan with the e.v.o. oil. I added chopped carrots, peppers, salt and parsley.
Meanwhile, I cooked the millet in a pressure cooker. Ratio: 1 cup of millet for 2 and a half of water, plus a pinch of salt. My millet cooks in 20 minutes from the whistle. Once done, I added it into the pan with the vegetables and mixed everything well. If necessary, you can add a pinch of salt, but this obviously depends on your taste. I let it cool for 10 minutes, and then I shaped my beautiful, round croquettes that I then rolled in bread crumbs. I baked at 180 Celsius degrees, until golden.
And here they are! As beautiful as the sun and, msot of all, delicious!
