Cold Spicy Soup
Yesterday, considering the temperatures, still summery, I prepared this creamy soup, with a fresh taste, spicy and peppery. The taste conquered us, as well as its creamy texture, which comes from rice I used, in small quantities, in the preparation … A light meal, very pleasant 🙂 🙂 I highly recommend it!
Ingredients:
1/2 red onion
200 gr of zucchini
1 small bunch of rocket
1/4 of red pepper
2 tablespoons of rice
4 glasses of water
1 pinch of chili powder
1 pinch of ground coriander
pepper
salt
e.v.o. oil to taste
1 teaspoon of lime juice
Method:
Fry the onion in a little oil, add sliced zucchini and simmer gently; add rice, water and salt. Cook over a low heat, covered, for about 20 minutes. If too dry, add water towards the end. Chop the rocket, add it and blend everything, once has just warmed. Add coriander, chili, pepper and lime. Adjust the dose of spices to your taste, mine was pretty spicy. Store in the fridge a couple of hours. Meanwhile, dice the pepper, pour the soup into the bowls – the recipe is for two – and add the pepper, I also had a few leaves of leftover rocket, so I used it as a decoration. Last night, this dish literally fortified us ! 🙂 🙂

excellent! there are many example of hot soups here but not that many for cold ones.this looks great!
