Falafelburger

Hi there! I haven’t posted anything for a while,  I was a bit busy at home, work and with the upcoming relocation! Yes, for a few months I’ll work close to my home, then I’ll start commuting, even if for just a few kilometres! This recipe came out just experimenting: I wanted something which tasted a bit of falafel (Middle-eastern fritters which I love), but that didn’t need frying, was less “granular” and less garlicky… the answer? Boiled potato! As always, I haven’t weighed ingredients…

Ingredients:
boiled chickpeas
boiled potato
onion
parsley
cumin (just  abit!)
coriander (just a bit!)
pepper
salt
extra virgin olive oil
corn flour

Method:
Blend all the ingredients together and eventually mix them with a boiled potato, mashed with a fork, until you get a nice and firm ball. Press to form a burger and roll it in corn flour; then brown it well in a non-stick pan, lightly oiled with e.v.o. oil.

I accompanied it with a nice and fresh salad of cherry tomatoes! Nice, tasty and complete dish! Seems almost a mini gateaux 🙂 My boyfriend stole half of mine 😛 what a fulfilment! A kiss to all of you, you’re always a source of inspiration!
