Hazelnut and Chocolate Muffins
Finally, hazelnuts are here! I have been given a beautiful basket of freshly harvested hazelnuts, I will use them different ways, but in muffins… I find them delicious, I particularly love combining them with chocolate. So, breakfast is provided, at least for a few days! ๐ Unless … the little mouse I have in my family devour them, before going to sleep in the evening, leaving only crumbs for the next morning! ๐
Ingredients:
120 gr of manitoba flour (very strong Canadian flour)
3 tablespoons of cornstarch
80 gr of sugar cane
30 gr of mixed seed oil
30 gr of chopped hazelnuts
2 cubes of dark chocolate
baking powder (check package for dose)
1 glass of almond milk or rice milk
2 tablespoons of hazelnut flour
flaked almonds to decorate
Method:
In a bowl, mix the dry ingredients. Add the liquid ones, alternating them; work the mixture well with a whisk, should be nice and spongy. If seems too thick, add more milk; I used almond one. Grate the chocolate and add it to the dough, let it rather coarse. Turn the oven on to 180 Celsius degrees. Meanwhile, fill the moulds; with this doses, taking into account that mine are of an average size, you should get 6 muffins. Decorate with almond flakes. When the oven is hot, place the moulds in and bake for about 15-10 minutes. Check with a toothpick! So, are you still there? Come on, today is aย muffins’ day ! ๐ ๐
