Barley, Chickpeas and Aubergines

This is a dish I prepared a few nights ago for a family dinner. I am very satisfied with myself, as I found the courage to propose completely vegan meals to my family (mum, dad, brother): they’re a little critical about my choice. In this occasion there were also a dear friend and her sister-in-law  and it’s a pleasure to propose alternative dishes to them ^_^. The menu included two fresh courses and a vegan dessert, the result was excellent ^ _ ^

boiled chickpeas
dried rosemary

Cook barley; in the meantime, cut the aubergine into cubes and stir fry them it in a pan, with a little oil and a clove of garlic, cut in halves. Once the barley is done, rinse it under water to remove starch; add chickpeas, aubergine and season with oil, salt, pepper and rosemary to taste.
Another way to enjoy this dish:  reduce the chickpeas in a creamy sauce ^_^ .A complete dish, packed with carbohydrates, proteins and vegetables ^_^

    I understand hat you say about other people around you and your family, quite the same here… BTW your barley looks so yummy!
