Peppers from my Kitchen Garden
When I’m home, I just have to go to my kitchen garden and do my km 0 “shopping” 😉
Ingredients:
2 yellow peppers
1 green pepper
1 onion
150 gr of semi-wholegrain rice
100 gr of azuki beans
1 teaspoon of white tahine
salt
extra virgin olive oil
Method:
Soak the azuki beans the night before… drain and boil them with one onion and a little salt. Cut the peppers and place them in a pan with some onion and water… I prefer to use water rather than oil, obviously they come out more tasteful if you use oil. Add rice to the peppers with a ladle of water from azuki, and keep doing so until they’re done. Then, blend the azuki with a teaspoon of white tahini. Finally, place rice, azuki and rice+peppers in a mould, adding bit of parsley to decorate.
Since I came back, my sister and her boyfriend always find a nice dish and a nice dessert on the table … but now I have to stop, or I can say goodbye to my diet…! I should start with some vegan cheeses or seitan, to add some protein …
One more thing: today I started using the wheat germ, but I put it in my morning bowl of oatmeal and milk… how else can I use it? Have a nice day you all !!!!! Kiss
