My First Muffins

My first time with this kind of sweet treats … are welcome, or better… give me a bit of advice! I was  inspired by Elettra’s recipe, with some modifications.

Ingredients for the dough:
100 gr of cake flour
50 gr of rice flour
15 gr of ground coconut
150 ml of soy milk
50 gr of brown sugar
2 tablespoons of hazelnut butter
cream of tartar
Ingredients for filling:
hazelnut butter, to taste

I combined flours, hazelnut butter, cream of tartar and sugar, then divided it in two different mixtures. In one of them I added soy milk; in the other, soy milk mixed with hazelnut butter, so as to get white and black muffins. This is the first one, without hazelnuts…

This one’s with hazelnuts…

I put them separately into the paper moulds and added ground coconut over the white ones and chopped hazelnuts over the black ones. I previously heated the oven and then baked them at 180°C for 18-20 min. Meanwhile, I prepared the hazelnuts cream and hazelnut+chocolate cream, for two different fillings. Once removed from the oven, I filled the hazelnut ones with chocolate and the white ones with hazelnuts.

This is the white one, with hazelnuts. Good! Now, the only thingI cannot understand is that they get stuck into the paper moulds … can you tell me why? Thanks 😉

    well… they’re just perfect! I tried just a couple of times with muffins but I just gave up, they didn’t come out spongy and I got sad 😛
    well done!
