Fried Green Tomatoes
This morning, my greengrocer had some beautiful green tomatoes, and walking just in front of them I couldn’t help but feeling to prepare them fried! So I skipped breakfast and went directly to the appetizer …
Ingredients:
green tomatoes
salt
pepper
flour
oil for frying
Method:
Cut the tomatoes into fairly thick slices, even 1 cm, let them drain the excess of water or pat dry with a bit of kitchen paper; season the flour with salt and pepper, I used a mix of flours for frying, made of plain and rice flour; the original recipe also calls for sugar that I haven’t put, but I think it’s to counter a bit the acidity of these tomatoes. Pass the tomato slices into the flour, after season it; make the slices absorb a lot of flour, to form a thick and nice coating, and then toss them mercilessly into hot oil. I’ve had them with a few drops of balsamic vinegar. Afterwards, I prepared a second version, less american and more “Puglia’s style” for lunch, seasoning tomato slices in a pan with garlic, breadcrumbs, oil, oregano and bay leaves and browning them in the oven (my grandma’s recipe).

…who can resist??? My granmda used to make them with sugar, I have some light memories of green fried tomatoes of, maybe 25 yrs ago?
