Punjene Paprike
…Or stuffed peppers! Typical dish from Serbia in its vegan version :-). Simple yet effective! A Serbian girl, who claimed she wasn’t good at cooking, prepared them for me the first time… well, that night we polished them off and we liked them so much that I reproduced them!
Ingredients:
8 bell peppers (mine were pretty small, from our kitchen garden)
approx 200 gr of rice
2 carrots
10 mushrooms
6 spring onions (those flat and sweet)
walnuts, to taste
vegan stock cube
Method:
Cook rice with vegan stock (like a risotto, or in a pressure cooker, as I do, with the right amount of water); in the meantime, wash and prepare the vegetables, remove seeds and filaments from peppers, and dice the other vegetables; put them in a pan with some oil and stock cube; when they’re done (but still firm), add walnuts, chopped, and rice, done, and mix. Then, arm yourself with a spoon and stuff the peppers, place them in a pan with a little oil and a drop of water and put in the oven. Bake them according to your oven, the important thing is that peppers must be soft and not burnt, the filling is already cooked, therefore keep an eye on it! Fifteen minutes were enough with my oven, but I cannot tell you how many degrees, as there’s only the knob with the symbol of a large and a small flames… Let’s say the temperature was not to the maximum, but almost there (I guess about 200°C) …
Et voila, your stuffed peppers are ready 🙂

The following day I brought them to a carnivorous (sigh!) barbecue, for the vegetarians who were there, along with a nice cold pasta with rocket pesto, grilled aubergines and tomatoes, and I must say they were very appreciated :-). In the filling, even if the Serbian recipe doesn’t call for them, I also put some pieces of pepper from the kitchen garden, not suitable to be filled :-).
I have a lot of photos of ready nice recipes, but never have time (and will?) to put them in writing for publication … I apologize, sooner or later I’ll make it (and in the meantime I keep cooking and piling up :-P)
