Fragrant Rustic Bread

Today I made these delicious bread rolls, and there was a fantastic aroma in my whole flat! That’s where their name comes from! Bread… what a goodness… 🙂

250 gr of superfine flour
250 gr of wholegrain soft wheat flour
2 teaspoons of cane sugar
dry brewer’s yeast, powdered (follow the instructions on the package for quantities)
3 tablespoons of olive oil
1 tablespoon of salt
various herbs (I used oregano, sage, rosemary and chives)
warm water
nutritional yeast flakes

Mix the two flours together with brewer’s yeast. Add less than a cup (then you’ll adjust the quantity according to your needs) of warm water, 2 teaspoons of sugar and oil. Mix it all with the mixer and towards the end add also herbs and salt. When everything is mixed, start kneading with your hands to incorporate air. Then, put the dough in a bowl, make a cross with a knife, cover with a damp cloth and let it rise for an hour to two. After that, form the bread rolls the shapes you like and place them on a baking sheet lined with baking paper. I sprinkled some of them with nutritional yeast flakes. Bake at 200°C for about 30/40 minutes (depends on your oven) and then … enjoy! 😉 They have a very little salt, as I like bread without salt so you can better taste foods you accompany them with.
