Diced Vegetables for Duna
Tomorrow my sweet and far Mom will face a not easy operation. She’s always in my heart and has always busted a gut for me. I dedicate this post to her, and I hope I’ll show my love in this way. The photo you see is part of a rich salad she prepared for us some Sundays ago, when we visited her. She cooks very well, healthy, and shows her love this way… cutting vegetables in one thousand million little pieces! What a patience! Good luck mum Donatella, Duna for me.
Ingredients:
2 green zucchini, just blanched and then diced
1 ripe avocado, finely diced
2-3 handfuls of green beans, cooked and cut into small pieces
chopped green olives
Tofu with olives, chopped into cubes
cashews, coarsely chopped
extra virgin olive oil, to taste
salt, to taste
lemon juice, to taste
Method:
Cook zucchini and green beans together and drain them well. Leave them a little crispy; chop into small pieces. Pour the vegetables in a large bowl and add all other ingredients: tofu, just browned in the pan with oil, chopped cashews, olives and avocado. Season with e.v.o. oil, salt and lemon. Let the salad sit for half an hour and serve with a huge slice of homemade bread. I hope you’ll like it, my mom had prepared a lot of it… we loved it so much that from Imola it arrived to Bellinzona, for my Monday lunch! A big hug to my brave Mum, I love calling her Mom… just as I love thinking of her and my Dad with my little girls! 🙂
