Cookies for My Breakfast
I have to say I am very very gluttonous and I always need some candies or cookies to cheer me up… if it’s something with chocolate, it’s even better! Then, I love having breakfast with a good rice or soy milk and lots of cookies :-). Therefore, today I prepared these cookies for breakfast … I think you just need a couple of them to feel full of energy! 😉
Ingredients:
100 gr of spelt flour
50 gr of wheat cake flour
2 tablespoons of unsweetened cocoa powder
2 tablespoons of chopped almonds
2 tablespoons of grated coconut
3 tablespoons of porridge oats
80 gr of sugar cane
1 / 2 cup of soy oil
soy milk as needed
Method:
Mix all the dry ingredients: flour, cocoa, almonds, coconut, porridge oats and sugar. Slowly, add soy milk and oil, and mix well until the mixture is quite thick, but not too thick. Shape it into balls with your hands, flatten a bit to give them the shape of a cookie and place them on a baking sheet, lined with baking paper. Bake at 180°C for about 20 minutes. And … they’re ready! Good breakfast at you all! 🙂
