Broccoli, what a passion!
Fortunately my family likes broccoli; they’re very much appreciated also simply steam cooked and seasoned with olive oil, lemon and chives. What I propose, however, is a tastier version that makes us polish them off; with some good homemade bread is an excellent and filling meal or, for the most gluttonous, a hearty side dish!

Ingredients:
500 gr of steamed broccoli
1 large red onion
1 handful of pitted green olives
2 pickled gherkins
5-6 sun-dried tomatoes
4 tablespoons olive oil
pepper and salt to taste
Method:
While steam cook broccoli – you’ll have to leave them underdone – rinse olives in cold water, soak sun-dried tomatoes, thinly slice onion and let it simmer gently with 2 tablespoons of oil and the same amount of water. When the onion becomes transparent, turn the heat off. When broccoli are done, chop and season them in a pan with onion, olives cut into quarters, drained sun dried tomatoes, squeezed and chopped.
Pan fry it all with the remaining oil, salt, pepper and crumbled chopped gherkins. Here they are, still in the pan …
Good as a side dish, but perfect, blending a part of them, even on pasta! 😀 Just try and let me know. Even the broccoli-skeptics will change their minds!
