Spaghetti with Radicchio
Here it is a makeshift dish I prepared for unexpected guests, but, as always, most welcome. A great success! And even if I had guests I thought of you and I made some pictures to post this recipe afterwards. This photo is my “plate”, me and my friends like eating, and helpings are huge every time.
Ingredients:
500 gr of spaghetti
oil
2 shallots
1 tablespoon of turmeric
150 ml of melon flavoured vodka
1 head of radicchio
250 gr of of soya cream
3 tablespoons of raisins
2 tablespoons pine nuts
salt
Method:
Brown the pine nuts in oil (if you prefer, you can also simply roast in a pan with little oil, but I preferred to fry) and add the raisins. As soon as you think they’re done, set them aside.
Stir fry shallots in oil with turmeric. Add radicchio, salt and cover with a lid. After a few minutes, pour the vodka in and mix well. Now cover again, reduce the heat and let it cook. Add soy cream and raisins with pine nuts, let it all flavour a couple of minutes and then add the pasta.

This one realy intrigues me… raisins, pinenuts, and melon vodka, seems so tasty
