Amaranth and Lentil Pie
This recipe is very similar to another I previously prepared, however, what change are method and arrangement. In fact, given the kind sport I practice, I should always eat this way, but lately, because of you … just joking :-D, I eat quite heavy and seasoned. Also, here at my parent’s home, I do have “everything”, from home-made vegetables in oil, dried fruit found on the mountains, which is round the corner, vegetable from our kitchen garden; and most of all a very sweet must, which I have been given, and is now present in all my meals; is not the ideal food for my diet, but how can I resist? So, today, I thought I’d prepare one of my usual energetic dishes, but changing its arrangement.
Ingredients for the base:
100 gr of lentils
2 tablespoons of flour
extra virgin olive oil
salt
Ingredients for the filling:
200 gr of amaranth
3 medium bell peppers
1 tablespoon of shoyu
salt
oil
flaxseeds
Method:
Soak the lentils an hour before cooking. Let them boil until become quite soft. Wash the peppers and boil them with a little salt; after 15 minutes blend them and put them back into the pan with a little cooking water; add shoyu and amaranth. Cook amaranth, adding the cooking water from lentils, for about 20 minutes. Turn the fire off, add a little oil and cover. Meanwhile, blend the lentils with a little cooking water and once you get a cream, add the flour and keep blending (if your blender cannot do it, do it with a fork); add a trickle of oil and keep blending. Place the cream on a greased baking pan, spread it with your fingers (the texture will be quite hard and sticky); lay a layer of amaranth, which now has absorbed all the water, add flaxseeds (or any oil-seeds) and bake at 180°C for 15 minutes.
