Potatoes with Almonds and Sage
Ingredients:
(serves 4)
1 kg of potatoes
40 gr of olive oil
3 teaspoons of vegetable bouillon powder
2 tablespoons of chopped almonds
1 tablespoon of nutritional yeast flakes
a few cloves of garlic to taste
fresh sage leaves
paprika
Method:
It’s very easy, just peel the potatoes and cut them into chunks, not too big. Then rinse under cold water and soak to let them lose the starch (they will be more crisp). Place them in a baking dish and add vegetable broth powder, paprika, cloves of garlic and olive oil. Also, add the sage leaves, previously washed, and put it in the oven at 220°C for about 20 minutes. Once the time has passed, remove them from the oven, add ground almonds and nutritional yeast flakes and mix well. Bake for 15 minutes more (if you have it, use the “grill”) until they’re golden and crisp. Here it is a closer look.
These potatoes are very tasty, because almonds and yeast flakes, together with the garlic, remind the Parmesan cheese, so if you have some vegan parmesan, you can just it, will be perfect! You can accompany the potatoes with some green beans and peppers, stir fried with a little olive oil and a pinch of paprika.
