Delicious Baked Rice


I haven’t posted any recipes for a while and today I would like to welcome all the new chefs! This rice is a classic, a veganized recipe, very tasty. Rice timbale, preferably if leftover: this is a good way to recycle it!

rice for risotto, cooked with onion, e.v.o. oil, rosemary and salt
1 glass of vegan milk (I always use oat milk)
chickpea flour (for 2 cups of rice, I used approx 1 coffee cup of chickpea flour …)
extra virgin olive oil to taste
ground black pepper
vegan cheese to flavour (if you have it and like it)

Cook the rice in a saucepan, with the onion, finely sliced, e.v.o. oil, rosemary and salt. If you like it, add a clove of peeled garlic. When the rice is done, put it in a bowl along with milk, chickpea flour and more e.v.o. oil. Stir it all and add some black pepper. Pour it into a baking dish, lined with baking paper and sprinkle with bread crumbs the entire surface of the rice pie. If you have it, add some vegan cheese cubes… it will be even more delicious! This dish, much lighter and simpler than the one with eggs and cream that I knew, it’s perfect accompanied with Melitzanosalata, the delicious Greek sauce made of aubergines. I love rosemary, chickpea flour and aubergines together! Just try it! A quick and effective dinner! Enjoyyyyy! 🙂
