Red Mangetout


The name of this recipe sounds a little odd… I thought that “mangetouts in tomato sauce with grilled polenta” was far too long and banal 🙂 However, the preparation of this recipe is very quick: it will be if you’ll remember to keep aside a little bit of polenta and roll it out before it gets cold.

cold polenta, cut into squares of about 4 cm (already salted)
mangetouts, clean and cut into strips of 2-3 cm
2 ripe tomatoes, diced
red or white onion, finely chopped
1 teaspoon of tahini
extra virgin olive oil

Grill the squares of polenta, adding a little e.v.o. oil. If you do not have a grill, you can scorch them in a pan. For the mangetouts: get a saucepan, add oil and pour the onion in, finely chopped. Stir fry it with care. As soon as the onion gets transparent, add the mangetouts and salt lightly. Close with a lid and let it cook with a little water… after approx. 10-15 minutes, when the mangetouts are almost done, add the diced tomatoes. Let it cook stirring for a few minutes, until tomatoes turn into a thick creamy sauce. Now turn the heat off and add the tahini, mixing very well. Serve hot or warm, sprinkling all over with sesame seeds. Hope you like it, I’m nuts about it! 🙂 It’s a tasty and peculiar side dish, tahini goes great with tomato and onion! Try it!     You know what? Never tasted mangetouts, as far as I remember! They must be delicious, I want to try and find them
