Tiramisù
Well, yes, yet another tiramisu! I know there are already more than a thousand recipes, but one more won’t harm :-D. I’ve come up with this version from the cream for the cheesecake made of vegrino cheese and “whipped” soy milk, and I wanted to try it … excellent!! !
Ingredients:
400 gr of digestive biscuits
coffee for 6
dark cocoa powder
dark chocolate
vegrino produced from 400 gr of soy yogurt
150 ml of soy milk
300 ml of corn oil
100 gr of sugar
vanillin
Mehod:
I used digestive biscuits since I still had them, but also other vegan biscuits will do… I’m not sure which ones though, these have the perfect consistency and taste for this cake, so I’m looking forward to receiving suggestions to replace them :-D. Well, prepare coffee and let it cool, add 3 teaspoons of sugar. You will need to have the vegrino cheese ready, prepared some days in advance (at least 3-4)… I made it plain, from the big pot of 400 gr of plain soy yogurt. Whip the soy milk with the hand blender, by adding oil very very slowly, and also combining half the sugar and vanillin, until it gets nice and thick. Mix the cream thus obtained with vegrino cheese and add the remaining sugar (taste it and then follow yor taste ;-)). Now, prepare the layers. Dunk the biscuits in the coffee and do one layer, then a layer of cream and a nice sprinkling of dark chocolate… and here I used the trick… the wonder that my Mum bought me a few days ago… the “grattaciok” to grate chocolate ! : D

Make three layers and finish with a good sprinkling of cocoa powder and grated chocolate again … A couple of hours in the fridge and you’re done!
