Fried Potatoes…
… grandma Andreina style. She does them always this way, and they’re very good:-D
Ingredients:
potatoes
onion
rosemary
salt
pepper
oil, to fry
Method:
Peel and cut potatoes into sticks, or slices or wedges, as you like best. Put them in a bowl, with cold salted water and leave them there for about 15 min. Meanwhile, slice the onion, rather thick. Drain the potatoes well, and pat dry them with a kitchen cloth. Heat a little oil (about 1 + 1 / 2 finger on the bottom of the pan) and, when hot, fry potatoes, onion and a whole rosemary sprig. Fry them covering the pan, stirring occasionally. When done, drain them with kitchen paper, sprinkle with salt and pepper and enjoy!

Nobody makes them as my grandmother does, not even me ;-). Probably, it all depends on the pan, she has an old iron one, it is spectacular :-). The peculiarity, however, is the way they’re done: the potatoes must not swim in the oil, and the lid on the pan keeps the heat and humidity (and also oil splashes, which is good!), so that the potatoes can be cooked well, and form a delicious crispy crust; and onion and rosemary release all their flavour and aroma. Even rosemary is good to be eaten fried 😛
