Banana Muffins


Fantastically light, for a greatly enjoyable snack ! 😀

As I was wandering through the web waiting to bring my *kid* to the veterinary for the vaccine, I read about these famous muffins. with banana, and I said to myself … why not? 😀

(makes 6 muffins)
115 gr of superfine flour
60 gr of malt barley
1 ripe banana, quite big
1 level tablespoon of baking powder
1 / 2 cup of soy milk
warm water (optional)

First, mash the banana with a fork to get a mush that you’ll combine with barley malt. Mix well and add soy milk as well. Then, add sifted flour and baking powder (I’ve diluted it in warm water, even though it was supposed to work as  an “instantaneous”, and is still fine. You can do like this if the dough is too hard ;-)). Fill the muffin cups up to 2 / 3 and bake at 180°C for 20 minutes.

They have a fantastic texture! Outside, they form a thin crust/skin and the inside is so spongy! The taste of the banana is not strong nor too sweet, the malt mitigates the sweetness, somewhat. Oh, and you can smell a heavenly aroma all around your home ;-)!

    look excellent, I read somewhere that bananas can be used to replace eggs. I want to try them

    They sound very good, as Heidi I knew that bananas can be used to replace eggs, and actually my Mum made a delicious cake with this method last month.
