Spicy Comforting Soup
If you like spicy flavours, with a slightly bitter aftertaste, this soup is for you.
Ingredients:
1 bunch of turnip greens
3 sun-dried tomatoes
1 organic vegetable stock cube
extra virgin olive oil
1 cup of black-eyed peas
2 cloves of garlic
1 shallot
1 pinch of spices for kebab
pepper
almond flour
Method:
In a skillet, fry the garlic in a little oil, add turnip greensa, washed and cut into pieces about 1,5 cm long, dried tomatoes. cut into thin strips, and a nice sprinkling of pepper. Let it cook, adding a drop of water a couple of times. Separately, fry the shallot, finely sliced, in a drop of e.v.o. oil and water, add the beans, soaked 12 hours, a pinch of spices for kebab, a vegan stock cube and two cups of water, then let it cook until the beans are tender (about 1 hour – 1,5 hour). Combine the two preparations, add a handful of almond flour and serve hot, with toasted mixed wholegrains bread with pumpkin seeds. Enjoy your meal!

it really seems very comforting! I think I’ll use canned beans though, I’ll let them flavour as you said but using the pre-cooked ones. must be great
