Pasta Zucchini and Roses

Tired of the usual pasta? Try this recipe, a successful matching of flavours, and is both decadent and springlike …

Ingredients:
200 gr of hemp macaroni
3 zucchini
1 shallot
1 curl of soy margarine
1 heart of red radicchio
1 package of soy cream
rosebuds (mine were by Sonnentor)
garam masala (mine was by Sonnentor)
almond flour
pink pepper
salt

Method:
Quickly fry the shallot in the margarine, add zucchini, cut into thick rounds, and radicchio, sliced, with a light sprinkling of garam masala; add salt and pepper, then let it cook briefly and add soy cream.

When the zucchini get tender (not mushy) add the rose buds, almond flour and the pasta, underdone (“al dente”). Serve piping hot and… have a good early spring 🙂
