Hazelnuts and Dates Hardbake
… When you feel like having a snack!
Ingredients:
500 gr of shelled hazelnuts
5-6 dates
3 heaped tablespoons of wholegrain rice malt
1 pinch of salt
oil
Method:
Arm yourself with patience and shell the hazelnuts, one by one (I thank Paolo who saved me this chore), toast them, let them cool and remove their skins. Chop the dates into small pieces and combine them with hazelnuts. In a large pot, let the malt caramelize over a low heat with a pinch of salt. When it does not drip from the wooden spoon, it means that it is ready: now add hazelnuts and dates and mix quickly. Place everything in a large baking sheet (if you can, preferably on a marble worktop) and spread it as much as possible, with the halp of a spoon or by hand (it’ll cool quickly). Place the sheet in a place cool enough and after 1 hour, with the help of a large knife, cut it it as you like.

It’s a snack easy to prepare and may have many variations. So much better than the harbakes you fine around, packed of sugar, honey and fats ๐
