Sweet Rice Pralines
I haven’t prepared a sweet recipe for a long time, yesterday it was the perfect occasion: an “all-pizza” dinner… they made two beautiful pizzas for me (obviously, I didn’t have all of them by myself): tomato sauce and chopped zucchini with a lot of mint, roasted peppers and bread crumbs on top (you have to try it to understand how good it is…) and I brought the sweet 😛
Ingredients:
500 ml of almond milk
200 ml of water
200 gr of brown rice
5 tablespoons of unsweetened veg cocoa
2 tablespoons of cornstarch
1 tablespoon of olive oil
2 handfuls of chopped hazelnuts
2 teaspoons of sugar cane
grated coconut, to taste
drops of rice milk white chocolate
Method:
Put milk and water in a pot. As soon as it starts boiling, add sugar and rice. Let it cook, covering with lid, for about 1 hour (the rice must be well done and must have absorbed the liquid), stirring frequently. Once done, place the rice in a bowl, add cornstarch, oil, hazelnuts and cocoa to get a pretty thick mush. Shape some pellets the size of a walnut, then roll them in grated coconut. Place them in the paper cups and add a drop of chocolate on the surface. Let them stand for 30 minutes in the fridge before serving.
Comments:
Omnivores seemed pretty skeptical, but when they tasted them, they went like hot cakes. I used bought almond milk, therefore it had sugar in it, that’s why I didn’t add much sugar.
