Spicy Hearts

… Dedicated to all the VeganWiz chefs, who in these days have shown to have a big heart. It is dedicated to those who love spices and the aroma of freshly baked cookies, with those aromatic notes that float around your home. Perfect for a little cuddle, accompanied by a nice herbal tea, they are delicious:)

Ingredients:
10 tablespoons of flour
2 tablespoons of soy butter
3 tablespoons of sugar cane
1 pinch of salt
1-2 tablespoons of rice milk
1 / 2 teaspoon of cinnamon
1 / 2 teaspoon of ground ginger
grated zest of 1 organic lemon
cardamom berries to taste
1 teaspoon of baking powder

Method:
Mix well all dry ingredients in a bowl, leaving aside the cardamom berries. Add the softened soy butter – you can also replace it with oil –  start working with your hands; if it becomes too dry, add one or two tablespoons of rice milk. The pastry should be very compact and workable. As soon as you manage to shape the classic ball, wrap it in a cling film and store it in the fridge for 30 minutes. Then, roll it out with a rolling pin, you should get about 25 cookies, therefore adjust the thickness as you prefer; I rolled them out pretty thin, but in a way that they could be cut with the cookie moulds. Turn the oven on to 180°C. Once cut, place one or two cardamom seeds at the center of each little heart, pressing them slightly. As soon as the oven is at the right temperature, place them on the baking sheet, lined with baking paper, leaving a bit of space between one and the other. Bake for about 10 minutes, but check the baking, of course. You can play with the spices, adding them to taste. The result, however, is a dry biscuit, not that much sweet, very suitable after a meal with a tea… very spicy! They keep well for days, in the following days the taste gets even better 🙂 🙂
