Almonds in Green
Oof! Oof! And oof again! I’m not able follow the thousands of recipes you all publish. I want to comment on all of them, but I do not even have the time to cook, as you can imagine I cannot spend hours on VeganWiz. Yes, because I’d need half a day to comment on all 🙂 A very welcome to the new chefs, always original and surprising, and a special greeting to Daddo, so young and already fiddling in the kitchen 🙂 This is not even a recipe, but only excuse to say I’m still alive! I hug you all, old and new virtual friends. (Nello, I have a photo for you, but I cannot publish it because it’s upright! Well, celery and lettuce cannot grow horizontally, can they?!)
Ingredients:
1 pack of peeled almonds
1 bunch of rocket (I know it’s out of season, but it was really good looking, and I could not resist, I had to take it home …)
extra virgin olive oil, as needed
a bit of cooking water from pasta or ravioli or gnocchi 🙂
Method:
I chopped the almonds with the small food processor. Meanwhile, M. washed the rocket and cut it quite coarsely with a knife. We added oil and a bit of cooking water from the ravioli, and stirred to mix it all well. It’s really simple, but it is soooooooo good … especially in summer! 🙂 Here it is, with vegan ravioli with tofu and veggies:

sounds a delicious way to have rocket… sometimes you know, is too bitter. this way the almonds, I guess, sweeten it a bit
