B & W Coconut Balls
These Black and White coconut pellets have been created by copying a few recipes I found on the blog… I saw that there are several versions already, but none of them satisfied me completely… so mixed them all 😀
Ingredients:
300 gr of flour
250 gr of coconut flour
16 gr of baking powder
4 teaspoons of potato starch
grated rind of one lemon
cocoa powder
80 gr of margarine
200 gr sugar
water, as needed
soy milk
Method:
Prepare two separate mixtures, dividing the ingredients.
For the white balls, take 150 grams of flour, add 100 grams of sugar, 8 gr of baking powder, 2 tablespoons of starch, 100 grams of coconut flour, a knob of margarine (about 40 grams I think), the grated rind of a lemon and a drizzle of soy milk; start working it, adding a little water until the mixture is firm, but not too dry.
For the black mixture, just do exactly the same, but instead of the grated lemon add the cocoa powder (I didin’t weighed it, just saw how coloured the mixture got).
As for the sugar, I added the white one to the lemon flavoured white pellets, and cane sugar to the other, to give a lighter color to the first – but then it all depends on your tastes. In fact, I’ve written above that I used 100 grams of sugar for each mixture, but actually I put 80gr, but they came out not that sweet… it depends on the tastes, I’m not a great lover of sweetnees, therefore they were OK for me, but my Mom wanted a little more sugar.
Leave the two balls in the fridge to rest for an hour. Then, line a baking sheet with baking paper and start shaping the pellets, by picking the pieces directly from the mixtures, and shaping them with your hands, a little wet. Roll them in the coconut flour, poured in a deep plate, (the 50 grams of leftover coconut flour) and lay them on the baking sheet, one next to the other.
Bake in preheated oven at 200°C for about 20 minutes, then switch to the grill function, also raising the temperature for the last 5 minutes, to brown them on the surface.
You can place them on a nice dark plate, sprinkled with icing sugar… and voila… excellent, very much appreciated I must say… and then, just imagine the aroma of coconut diffused by the oven, that invaded all the the room while they were baking!…! 😀
