Barley with Radicchio and Pine Nuts

Ingredients:

1 cup of barley
vegetable broth
leek
onion
radicchio
soy sauce
chilli
pine nuts
extra virgin olive oil

Method:
Fry onion, leek and chilli in e.v.o. oil. Rinse the barley under cold water, drain it and pour it in the pan, along with the chopped radicchio. Sprinkle with soy sauce and let it cook, covered with the lid, adding the veg broth until it’s done. Once done, add a handful of pine nuts.

Comment:
I do not use salt, only in rare cases and when I don’t cook just for myself, therefore I use soy sauce to replace salt ­čÖé
