Savoy and Pumpkin Fritter
This is undoubtedly the most delicious fritter I’ve ever done! A really yummy colour, fragrance and taste. Try it!
Ingredients:
3 tablespoons kamut flour
1 tablespoon of millet flour
1 / 2 medium Savoy cabbage
300 gr of pumpkin
1 / 2 leek
water
extra virgin olive oil
salt
pepper
turmeric
paprika
almond flour
nutritional yeast flakes
Method:
Fry the leek, thinly sliced, in a little oil. When it gets golden, add the cabbage, cut into thin strips, and cover with a lid. After a few minutes, add the grated pumpkin, season with salt, sprinkle with paprika and let it cook, covering the pan with a lid, for 10 minutes. Add almond flour and mix well. Prepare a batter, slowly incorporating water into the flours, mixed; add half a teaspoon of turmeric, a little oil and season with salt and e.v.o. oil. Now, combine the cooked vegetables with the batter, add plenty of nutritional yeast flakes and mix well. Heat a little oil in a frying pan and lay small amounts of the mixture with a spoon. Cover with a lid and, after a few minutes, turn the fritters to cook other side. They’re deliciuous!
