Snowballs
Here I am, wrapped in a blanket, cold, with a strong flu! ๐ Therefore I publish a sweet thing I prepared a few days ago, to sweeten this gray day ๐
Ingredients:
20 tablespoons of rice milk
2 tablespoons of cornstarch
1 and a half tablespoons of sugar cane
3 tablespoons of coconut flakes (plus some to roll the balls on)
8 tablespoons of chopped almonds
4 crumbled vegan biscuits
sesame
Method:
Easy peasy, pour the rice milk in a pot with cornstarch and sugar. Put it on the heat and keep stirring until has thickened throughout. Turn the heat off and add 3 tablespoons of coconut, chopped almonds and crumbled cookies. Mix well and refrigerate for an hour, so that the mixture will get firmer. Then, remove from the fridge and shape some small balls. Roll them in coconut flakes and sesame seeds, mixed together. They’re ready to be enjoyed, but would recommend to keep them in the fridge for a few hours more, so they become even better! ๐
