Yuca Croquettes

The yuca is a root, cooked throughout much of Latin America and Africa (it is also called yucca, cassava or manioc), but in Italy it is almost completely unknown – but if you look well in supermarkets or ethnic food stores, you’ll find it.
It is cultivated in all tropical areas of the world for its excellent resistance to the heat. It is worth knowing that not all varieties of yucca are edible, some of them are toxic.

It looks like a large brown carrot, with a very hard whitish pulp. A good yuca should have a firm flesh, dry, hard and white. If not, you’d better not to buy it, as it’s probably gone.
In general, can be cooked like potatoes – the cooking time, however, is longer.

Ingredients:
yuca, the three pieces you see in the photo below
soy milk, a few tablespoons
1/2 cup of bread crumbs
a few tablespoons of extra virgin olive oil
pepper
nutmeg
salt

Method:
Peel the yuca with a knife (best done in the sink, using gloves, since it can stain) and wash it well under running water. Cut it lengthwise and cook in a pressure cooker for about twenty minutes (I put in the basket for the steam cooking).

When ready, the pulp becomes soft and yellowish. You will notice that in the middle there’s is a filament (like a yellow “string”), that should be removed. Now, cut it into pieces and mash them with a potato masher; add a few tablespoons of olive oil, salt, pepper and nutmeg. You’ll see that the mixture will be very firm and sticky, because the yuca is rich in starch. Therefore, if you think it’s necessary, add a few tablespoons of soy milk, to make it softer.
With your hands, shape some croquettes that you’ll roll in the bradcrumbs.
When ready, you can brown them with a little oil in a nonstick pan.
I served it with lettuce, tomatoes and a tablespoon of vegan mayonnaise.
